Healthy Muffins (Low Sugar, Date and Nut)


Woah, I know I'm supposed to write a few crazy paragraphs about how you should totally try my recipe- but I, for one, never read these things nor am I interested in writing them. So, without further ado, let's look at these delicious, airy and nutritious muffins! 

Prep Time: 15 minutes

Bake Time: 20 minutes

Ingredients

1. 3/2 cups of whole wheat flour
2. 1 tsp baking powder, 1/2 tsp baking soda
3. 2 eggs
4. 1/3 cup of any oil (avocado or olive preferred)
5. 1/2 cup chopped, soft dates
6. 1/4 cup sugar (any kind, but to keep things healthy lets go with coconut or brown) 
disclaimer: these muffins are not that sweet due to dietary considerations, but add more sugar if needed
7. 1 tsp vanilla extract (need this to smell good)
8. 1/2 cup plain yogurt (not greek!)
9. 1/4 cup nut of choice (optional)

Instructions

1. Preheat oven to 350 degrees fahrenheit and line a muffin tray with paper liners.
2. Get two bowls. In one, combine flour, baking powder, and baking soda
3. In the second bowl, whisk eggs, oil, sugar, vanilla and yogurt - add dates at this time. 
4. mix dry and wet ingredients and nuts (optional)
5. transfer batter to muffin cups until they are 3/4 of the way full
6. bake for 18-20 minutes or until a toothpick comes out clean!
7. cool and enjoy!
